BLUEBERRY AND KALE SMOOTHIE

While this might sound like a less-than-appetizing combination, you can take our word for it that it is absolutely delicious. Your family and guests will swoon over this rich and yummy dessert, that can double as a power snack. The avocado is undetectable but adds an amazing creaminess and is an easy way to sneak NUTRIENTS into DESSERT, that no one will be the wiser.
*Note- serve these the day they are made to prevent oxidation of the avocados.
NUTTY BUTTER APPLE SANDWICHES
We are always being asked about our favorite snacks, and this simple snack ranks up high. Inspired from the kid favorite "ant's on a log", we made this version with a crisp and sour green apple. Feel free to get creative with this one. A great mid-afternoon pick me up, or pre-workout fuel up. It also happens to be very kid approved!

With a title like this, need we say much? This is a nutritious and delicious breakfast or grab and go snack. You can pour milk over it and eat it like cereal, stir some into your morning yogurt to make a parfait, or simply package it to go like any granola and enjoy on the go. When you pack your oatmeal with a lot of healthy fat and protein, you'll stay away from HANGRY for hours to come.
VEGGIE LOADED MINI MEATLOAF
This is a fun take on boring ol meatloaf and is full of hidden veggies. It's a VFit Sqaud spin on a classic, full of fresh flavors and nutrient superstars. Your kids will even gobble this one up!! You can make this dish as a large meatloaf (add an extra egg), or form into cupcake tins and served as mini meatloaf's.
LOADED SWEET POTATO NACHOS
Transform your favorite snack/appetizer from nutritionally void, to a nutrient powerhouse of a meal by swapping out tortilla chips with thinly sliced sweet potato circles, and loading 'em up thick with veggies, avocado, and beans. Adapted from Two Peas and Their Pod. Add some fresh chicken, beans or ground meat of choice to up the protein on this fabulous dish. You can also skip making chips from the sweet potatoes and instead bake them, adding all toppings after to make a "loaded" sweet potato.

Hello summertime in your mouth!This is a great dish for anyone who loves shrimp. You can serve in lettuce cups, over a bed of chopped cabbage, with a side of plantain chips or anything that sounds good to you. Refreshing and full of flavor.
WHOLE FRUIT WATERMELON POPSICLES
This is a most refreshing and amazing way to eat your fruit during the summer. Kids will love the taste and color as well. You will just need to have Popsicle molds on hand. If you do not, use an ice cube tray and place toothpicks in the trays when setting mixture.
