You have heard all the hype over this super food, so give it a try! Swap out Zoodles for any dish you would use pasta. Your family and guests may not even notice the difference and will be filled with extra nutrients. You will need a spiralizer to get the perfect noodles, but you can use a peeler as well. Discard the seeds if using a hand held peeler. We like to portion 1 medium zucchini per person.
Take zucchini and spiralize into noodles. Place flat on a baking tray and sprinkle and dash of sea salt over zoodles. Let sit 10 minutes and pat dry with a paper towel. The sea salt will draw up any extra moisture from the zoodles. If you do not have a tool to make zoodles, cut zucchini into long and thin strips or use a hand peeler.
Preheat over to 400 degrees and bake zoodles for 10 minutes to heat up. You may also sauté them in a pan, but we find the oven cooks them perfectly
