- 1/2 Head cabbage green, purple or both
- 2 Medium carrot shredded
- 1/4 Cup dried cranberries look for ones not sweetened with sugar
- 3 Tbsp pepitas or slivered almonds, or seed of choice
Dressing
- 1/2 Cup mayonaise
- 2 Tbsp apple cider vinegar
- 1 Tbsp dijon mustard
- 1 tsp caraway seeds
- 1/2 tsp tumeric
- 1/2 tsp paprika

Slaw
- Slice the cabbage as thinly as you can, or purchase pre-chooped cabbage. Grate carrots with a coarse grater, salad shooter or you can julienne them very finely, Combine carrots with cabbage in a large bowl.
- Add dried cranberries and pepita seeds if desired before serving.
Dressing
- Mix mayo with mustard, turmeric, paprika, vinegar, and caraway seeds. Pour over cabbage and carrots and toss until thoroughly coated. It’s best if you cover with plastic wrap and refrigerate for at least 1 hour before serving (stir before serving since dressing tends to settle to the bottom of the bowl).
