- 2 Large russet potato peeled. Can sub white sweet potato
- 2 Tbsp olive oil
- 1/2 Cup parsley chopped
- 1/4 Cup Parmesan cheese grated
- 1 tsp truffle oil

- Pre-heat oven to 425 F.Slice potatoes length-wise into 1/2 “ sticks
- Transfer potatoes to saucepan of salted water; enough to cover, and bring to a boil. Let boil 2 minutes, drain, and cool.
- In a large bowl, toss potatoes with Olive Oil. Spread potatoes on baking sheets lined with parchment paper.
- Bake 30 minutes, switching baking sheets from top to bottom every 10 minutes. Remove from oven, and toss fries with parsley, cheese, and truffle oil.
