Swordfish with Quick Green Sauce

You can quickly throw swordfish steaks on a grill or pan sear and hop in the oven for an easy fish dish packed with protein. What really sells us here is this quick green sauce, made with a melody of herbs and spices that make this feel fancy even though it's a quickie meal to put together. Serve with an easy side of chopped salad, baked potato, or cauli rice and you're golden! This sauce would also taste great with chicken or shrimp.

Ingredients
  • 4 swordfish steaks roughly 1 1/2 lbs
  • 6 Tbsp olive oil divided
  • 1/2 Cup fresh mint
  • 1 clove garlic minced
  • 2 lemons
  • 1/2 tsp coriander
  • 1/4 tsp ground cumin
  • 1/2 tsp smoked paprika

Instructions
  1. First, brush swordfish with about a teaspoon of the olive oil and grill 3-4 minutes per side, until cooked through. Alternatively, you can pan sear each side quickly on stove top and finish in oven for about 5-8 minutes at 350 degrees, careful not to overcook.
  2. To make the sauce, place mint, garlic, juice from one of the lemons, coriander, cumin, and smoked paprika until finely chopped. Then, slowly add in the remaining olive oil. Pulse until it is well combined.
  3. Divide evenly into four portions and drizzle with sauce. Serve with lemon slices so you can add extra lemon juice to the cooked swordfish for a citrus boost.
