We are here to show you that you can make "noodles" out of so many healthy veggies! This is a fantastic and heart warming dish that is great in the fall and winter. Attn: Veggies! Meat is optional. You can always sub out zoodles or any other noodle of your choice. We recommend doubling the recipe as this will make for fantastic leftovers during the rest of your busy week.

Roasted Red Pepper Sauce
Cook ground meat until cooked through and salt and pepper to taste.
Roast your bell pepper at 350 degrees for 10 minutes until the skin starts to blister a bit. Then cut in half and discard seeds. While bell pepper is cooking, steam sweet potato cubes in water until soft to a fork.
After bell pepper and sweet potato cubes are cooked, throw together with all other sauce all ingredients (except ground meat), into a high-powered blender and blend until smooth and creamy. Pour over meat.
Begin by making the “noodles” out of the raw sweet potato, using a spiralizer or vegetable peeler, set aside in large bowl.
In a little coconut oil or water, add sweet potato "noodles" and cook until tender but not squishy.
Add sauce and cooked meat over zwoodles (sweet potato noodles) and serve warm.
