Ingredients
- 4 Pounds short ribs bone in, fat trimmed
- 1 Tbsp olive oil
- salt to taste
- black pepper to taste
- 1/2 Cup dry white wine
- 1/3 Cup balsamic vinegar
- 3 sprigs rosemary
- 1/2 Cup yellow onion sliced
- 1 Cup carrot chopped

Instructions
- Place short ribs in slow cooker on low heat.
- Whisk together all other ingredients EXCEPT carrots and onion, and drizzle over short ribs.
- Cook on low heat for 8 hours, basting the ribs once. Skim off and discard fat that has accumulated on top before serving.
- Add carrots and onion the last hour of cooking.
