Ingredients
- 1/2 Cup pumpkin puree, look for pure puree with no added sugar
- 1 Medium eggs white - whisked
- 1/2 tsp pumpkin pie spice see Note
- 1/4 tsp pure vanilla extract
- 1/4 tsp salt
- 1 tsp pure maple syrup can add more to sweeten even more

Instructions
- Coat a microwave safe bowl with coconut oil spray or melted coconut oil.
- Combine all ingredients and mix well. (you can use a whole egg, but it tends to sink the middle a tad and the white alone keeps the fluff).
- Microwave for 90 – 120 seconds. Enjoy!
Recipe Notes
If you do not have pumpkin pie spice blend on hand, you can make your own using the following ratios (this'll make more than you need, but trust us, you'll want to have extra on hand for next time!):
- 3 Tbsp cinnamon
- 2 tsp ground ginger
- 2 tsp nutmeg
- 1/2 allspice
- 1/2 teaspoon ground cloves
