SINGLE SERVE PEANUT BUTTER COOKIES

Psssssttt....you can make these two cookies if you are craving some without having a huge tray of yummy cookies staring you in the face all day long. If self control with sweets can sometimes be a problem for you, this recipe is the solution! Yeah, it may be a bit of work, but it's likely all things you already have on hand and it'll come together quick. So quick, maybe no one will even realize you made them, so you can eat both. Your secret is safe with us.

  • 2 Tbsp buckwheat flour
  • 1/16 tsp baking soda
  • 1/16 tsp salt
  • 1 1/2 Tbsp peanut butter
  • 1/4 tsp pure vanilla extract
  • 1 tsp applesauce
  • 1 1/2 Tbsp dark choco­late chips optional

Instructions
  1. Preheat oven to 350F.
  2. Mix together dry ingredients (flour, salt, baking soda).
  3. Mix together the wet ingredients (peanut butter, vanilla extract, applesauce).
  4. Combine dry and wet ingredients. Stir in chocolate chips, if using. Mix well and form two cookies and bake for 8-10 minutes. Cool on wire rack a few minutes then enjoy.
