- 2 Tbsp buckwheat flour
- 1/16 tsp baking soda
- 1/16 tsp salt
- 1 1/2 Tbsp peanut butter
- 1/4 tsp pure vanilla extract
- 1 tsp applesauce
- 1 1/2 Tbsp dark chocolate chips optional

Instructions
- Preheat oven to 350F.
- Mix together dry ingredients (flour, salt, baking soda).
- Mix together the wet ingredients (peanut butter, vanilla extract, applesauce).
- Combine dry and wet ingredients. Stir in chocolate chips, if using. Mix well and form two cookies and bake for 8-10 minutes. Cool on wire rack a few minutes then enjoy.
