- 2 Medium eggs
- 1 Medium banana the more riper, the better
- 1 Tbsp chia seeds
- 1/2 tsp cinnamon
- 1 Tbsp coconut oil

Instructions
- Combine all ingredients except oil and blend well in a blender or food processor.
- In a pan heat oil over medium heat in a pan. Once oil is well heated (this is key), pour batter into pancake size scoops in pan. Flip once the pancakes start to bubble (approx. 2-3 minutes), and cook evenly on both sides. Make sure to check pancakes do not stick to pan.
