Ingredients
  • 1 Cup coconut milk canned works best
  • 1 Tbsp cacao powder
  • 1/4 Cup strawberries plus more for topping
  • 1/2 tsp vanilla powder optional
  • 3 Tbsp chia seeds

Instructions
  1. Combine strawberries and 1/3 of the coconut milk and pulse in a food processor until combined. Put mixture in a small bowl and add 1 tbsp chia seeds, per 1/3 cup of coconut milk. Stir well.
  2. In a separate small bowl, combine 1 tbsp cocoa/cacao and 1/3 c coconut milk. Stir until all lumps are gone. Add 1 tbsp chia seeds. Stir well, scraping seeds off the bottom of the bowl, and set aside.
  3. In a 3rd bowl combine 1/3 c coconut milk, vanilla powder, and 1 tbsp chia seeds. Stir well.
  4. Let all 3 bowls set in the fridge about 30-60 minutes or until firm. After about 15 minutes in the fridge, stir each mix ensuring the chia are evenly plumping. If it seems too runny, add a little more chia. Remove and gently scoop out to layer each flavor in clear mason jars or side by side in regular bowls. Top with strawberries, cacao nibs, and coconut. Enjoy!
