Moscow Mule's seem to be the drink of the times right now, so we couldn't help but to try and put a fresh and healthy spin on this refreshing cocktail. In this recipe, you are making your own gingerale in essence and will have extra ginger water on hand. You can always omit the alcohol to make this a delightful "mocktail" as well.

- 1 Cup ginger fresh, sliced or 1/2 tsp of ginger powder
- 4 Cup water to boil ginger in
- 1 Cup sparkling water
- 1 tsp coconut sugar to taste
- 1 Tbsp lime juice
- 2 oz vodka

Instructions
- Put the sliced ginger into a 4-quart saucepan. Cover with water. Bring to a boil, remove from heat, cover, and let steep for 1 - 1.5 hours.
- Strain into a 1-quart mason jar, discarding ginger. Cover and chill.
- Combine 1 part ginger water and 3 parts sparkling water, add ice. Sweeten to taste with stevia/ coconut sugar and then mix in your vodka as the final step.
