This is a fan favorite and so easy to make. The recipe came from our resident Nutritionista Monique Bogni. Impress any guest with these copy cat chocolate caramels. Add in a pecan or walnut to make them like turtles. Full of real ingredients you can pronounce.
Melt coconut oil on low in a small pan, then add maple syrup and raw cacao ( divine organics is a good brand). Stir as it melts and you have easy peasy chocolate that will harden when room temperature.
If your dates are not soft, soak in water for 20 min. Smash one date at a time in your hands, rolling around in your fingers until it is really soft and gooey. Divide each date into 2 pieces, and shape into balls or flatten into roundish squares. You will have 8 "caramels." If you are adding a nut to the center, squeeze it into the center of the smashed date.
Pour the chocolate over dates on parchment paper, then roll them around until they are fully covered in chocolate. You can freeze them as is and you will end up with extra chocolate goodness attached to your caramel, or you can place them on a different piece of parchment for a "cleaner" end product. Sprinkle a little pink salt on top of the caramels(optional but amazing).
