Preheat oven to 450. Salt and pepper your chicken.
In a side bowl, mix together your mustard, maple syrup, and vinegar. If you want to prep this meal ahead of time, you can throw the sauce and chicken in a zip lock for the day to marinade.
Bake chicken in dish with sauce poured on top, at 450 for approx. 30 minutes or until chicken is browned and sauce is caramelized. Flip chicken once halfway through to get both sides nice and glorious. Remove from oven and serve.
