Using a sprouted grain bread base, this is a delicious open faced breakfast sandwich that will keep you fueled during your morning with extra protein and fat from the egg, avocado and sliced turkey. You'll be ready to conquer anything the day throws at you after having this glorious breakfast!
- Coat pan with cooking spray or oil and sauté spinach or kale until cooked, set aside in oven or microwave to keep warm.
- Fry egg until yolk reaches desired hardness (I like mine runny!).
- Toast the English muffin.
- Top muffin with spinach, tomato, turkey, avocado, and egg. Add hot sauce if desired.
