Chop kale and dress with the dressing and a sprinkle of salt - use your hands to massage the dressing into the leaves, and let it marinate while you prep the other veggies. Add carrot, avocado, seeds, cheese, pepper, and toss. Top with the protein of choice if you are making this into a meal.
Combine everything but the oil in a blender or bowl, and blend or whisk to combine. Slowly add oil and mix until emulsified into a consistent dressing.
