Ingredients
Chicken and Salad
- 4 Cups spinach or greens of choice
- 1/2 Cup cherry tomatos cut into halves
- 1/4 Cup peppercionis sliced and seeded
- 1/4 Cup kalamata olives
- 3 Tbsp feta crumbled
- 1/2 Cup cucumber peeled and sliced
- 2 Medium chicken breasts grilled and sliced
Dressing
- 3 Tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp dried oregeno
- 1/2 tsp dried basil
- 1 tsp shallot minced
- 1 tsp dijon mustard
- 1/4 Cup red wine vinegar or fresh lemon juice

Dressing
- To make the dressing, whisk together all ingredients, adding the vinegar last.
Salad
- Combine salad ingredients, excluding protein. Toss with salad dressing, and split into 2 portions. Top with protein of choice.
