MEDITERRANEAN SPINACH SALAD

A simple, nutritious and delicious girl on the go style meal. This salad takes all of our favorite bits of Mediterranean cooking and pulls them together in a very satisfying salad.

Ingredients
Chicken and Salad
  • 4 Cups spinach or greens of choice
  • 1/2 Cup cherry tomatos cut into halves
  • 1/4 Cup peppercionis sliced and seeded
  • 1/4 Cup kalamata olives
  • 3 Tbsp feta crumbled
  • 1/2 Cup cucumber peeled and sliced
  • 2 Medium chicken breasts grilled and sliced
Dressing
  • 3 Tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregeno
  • 1/2 tsp dried basil
  • 1 tsp shallot minced
  • 1 tsp dijon mustard
  • 1/4 Cup red wine vinegar or fresh lemon juice

Instructions
Dressing
  1. To make the dressing, whisk together all ingredients, adding the vinegar last.
Salad
  1. Combine salad ingredients, excluding protein. Toss with salad dressing, and split into 2 portions. Top with protein of choice.
