Another must have holiday side dish. You can't go wrong with this simple, nutrient packed, sweet and savory dish. Or better yet, make a regular ol' weeknight FEEL like a special holiday meal and make this as a side tonight!
Bring large pot of water to a boil. Add sweet potato chunks and boil for 15 minutes or until potatoes are fork tender. Drain the potatoes and place in large bowl. Add coconut milk, maple syrup and spices.
Using a hand held electric mixer, whip the potatoes until smooth. Alternatively, you can place all ingredients in a food processor or a high speed blender to achieve same results. Serve sprinkled with cinnamon and/or a drizzle of maple syrup.
