- 7 Cups sweet potato peeled and cubed
- 1/2 Cup coconut milk
- 3 Tbsp pure maple syrup
- 1 tsp ground ginger
- 1/2 tsp cinnamon
- 1/8 tsp cloves ground

Instructions
- Bring large pot of water to a boil. Add sweet potato chunks and boil for 15 minutes or until potatoes are fork tender. Drain the potatoes and place in large bowl. Add coconut milk, maple syrup and spices.
- Using a hand held electric mixer, whip the potatoes until smooth. Alternatively, you can place all ingredients in a food processor or a high speed blender to achieve same results. Serve sprinkled with cinnamon and/or a drizzle of maple syrup.
