Sometimes you just want a snack with a crunch but just KNOW how unsatisfying it can feel to hit a bag of chips. This'll feed that salty, crispy craving wonderfully and comes together quickly. After removing the stems and chopping up the kale, you mix it in olive oil and a bit of salt, pop in oven and in 20 minutes your snack happy! Kale is insanely good for you: high in fiber, anti-inflammatory, antioxidant rich, full with a whole bunch of vitamins and tons of iron. Calorie by calorie, believe it or not, kale has more iron than beef. Not that we are sitting here counting calories, but it's a fun fact and hopefully will make you take that kale a little more seriously next time you pass it in the produce section.
Instructions
- Preheat the oven to 275 degrees F.
- Remove the ribs from the kale and cut into 1 1/2-inch pieces. Lay on a baking sheet and toss with the olive oil and salt.
- Bake until crisp, turning the leaves halfway through, about 20 minutes.
