Ingredients
Dressing
- 3 Tbsp extra virgin olive oil
- 2 Cloves garlic finely diced
- 2 tsp caraway seeds
- 1/4 Cup apple cider vinegar raw, unfiltered
- 1 Tbsp raw honey choose pure honey, raw for the most nutrients
- 1/2 tsp turmeric
- 1/4 Cup mayonaise look for one with clean ingredients list, or make your own
Slaw
- 4 Cups red cabbage shredded
- 2 apples (red) finely sliced
- 1/2 Cup cashews or preferred nuts- pistachios and pecans work well too
- 2 Tbsp cilantro fresh, for garnish

Instructions
- Heat olive oil over medium heat in a small sauce pan. Add garlic and caraway seeds and cook and stir 1 minute. Whisk in the vinegar and honey, bring to a simmer to combine. Season lightly with salt and pepper, to taste
- In a large bowl combine together the cabbage, apples, cranberries, and cashews. Add dressing and toss. Chill in the refrigerator for 1 - 2 hours before serving. Top with cilantro.
