We love the unexpected topper of this salmon dish with our homemade avocado salsa! Salmon is already full of protein and heart healthy fats. The avocado adds in even more heart healthy fat, nearly the alphabet's worth of vitamins (A, B, C, E, and K), folate, protein, and a boost of fiber. We love the contrast of creamy avocado, the crunch of the red onions, and the tender salmon underneath.

Ingredients
SALMON
- 2 Pounds salmon cut into 4 pieces
- 1 Tbsp olive oil
- 1/2 tsp salt
- 1 tsp coriander ground
- 1 tsp cumin ground
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp black pepper
AVOCADO SALSA
- 1 avocado peeled and pit removed
- 1 Cup red onion finely diced
- 3 peppers mild or hot, de-seeded, and diced
- 2 lime juice fresh
- 3 Tbsp olive oil
- 2 Tbsp cilantro fresh, finely chopped
- salt to taste
- black pepper to taste

Instructions
- Mix the salt, coriander, cumin, paprika, onion and black pepper together, rub the salmon fillets with olive oil and this seasoning mix, and refrigerate for at least 30 minutes.
- Pre-heat the grill.
- Combine the avocado, onion, hot peppers, cilantro, lime juice, olive oil, and salt in a bowl and mix well, chill until ready to use.
- Grill the salmon to desired doneness.
- Serve the salmon topped with the avocado salsa.
