This is a great appetizer to bring to a party and impress your friends. Mushrooms are a great source of protein, fiber, vitamins B and C, calcium, and minerals. Also, this appetizer looks and taste fancy, yet are so simple to prepare. You can get creative with the filling too and try different spice blends!

Ingredients
- 12 Nedium mushrooms
- 3/4 Cup feta crumbled
- 1/4 Cup basil
- 1/4 Cup sun dried tomatoes
- 1/2 Cup spinach
- 2 Tbsp olive oil
- 2 Tbsp garlic crushed
- 1/4 tsp sea salt
- 1/2 tsp ground pepper
- 1/4 Cup fresh parsley optional
- 2 Tbsp pinenuts optional

- Preheat oven to 350 F. Remove caps from mushrooms and place on a greased baking sheet. Bake cap side down for 10 minutes to drain out any extra moisture in the mushrooms.
- While the mushrooms are precooking, combine all other ingredients in a food processor or blender and pulse a few times until ingredients are well combined.
- Remove mushrooms from oven and stuff each mushroom with the filling evenly among mushrooms. Place back in the oven and bake 10 -15 minutes until the tops are lightly browned but not dry. You can also top these with some fresh parsley and pine nuts.
- If you are bringing to a party, pre bake except for the last 5 minutes and finish off in oven at party if possible. These are best served hot.
