This is great take on a classic Mediterranean dip made with eggplant. Eggplants are full of fiber to help fill you up and aid in digestion, as well as energy boosting vitamin B. This dip is full of flavor and nutrients, what more could you want! Serve with some veggie sticks or our grain free flat bread.

Instructions
- Slice the eggplant into 1/4 inch rounds and place on a baking sheet in an even row. Coat with olive oil and a little salt. Turn broiler in oven on and carefully broil 5 minutes per side. Eggplant will be soft and slightly grilled by the end.
- Let eggplant cool and peel off skin. Place peeled eggplant and remaining ingredients (except parsley) in food processor and blend until smooth. Season with salt and pepper to taste.
- Cool in the fridge and serve with a splash of olive oil and parsley, to taste.
