CROCK POT WHOLE CHICKEN
This is a wonderful way to cook a whole chicken and have it easily ready for salads, tacos or anything else you may need for the week. The chicken falls off of the bone and you can use the leftover bones to make our Immune Boosting Broth. Recipe was adapted from 100 days of Real Food with a few spice additions. You can add any flavor you like to this dish. No liquid is needed in the slow cooker since the chicken will release plenty as it cooks.

Instructions
  1. Set your slow cooker to low. Place chopped onion and half of lemon at the bottom.
  2. Combine the dried spices, garlic and chopped herbs in a small bowl.
  3. Remove any giblets (optional, they have a lot of nutrients for broth) from the chicken and then rub the spice mixture all over. You can even put some of the spices inside the cavity and under the skin covering the breasts.
  4. Put prepared chicken on top of the onions in the slow cooker, cover it, and turn it on to high. There is no need to add any liquid. Cook for 4 – 5 hours on high (for a 3 or 4 pound chicken) or until the chicken is falling off the bone. Then shred and store chicken to grab for easy meals during the week.
