This is a flavorful and easy to make dish great for a busy day if you plan ahead. Simply do the first step in the morning, then just before dinner you finish it off and have delicious carnitas meat to enjoy. We LOVE this as tacos, with cauli rice or over some spicy slaw.
Place the salsa, citrus juices, and chicken broth in the bottom of your crock pot. Meanwhile rub salt, pepper and spices around pork roast. Place spiced pork roast in crock pot on top of salsa and broth.
Cover and let cook on low for 6-8 hours. The meat is done when it pulls apart easily with a fork. If you are cooking longer than 8 hours, just add a little extra liquid to crock pot.
If you would like to crisp up the shredded pork, you can heat some coconut oil on high heat in a pan and pan fry the meat a few minutes to desired crispness. Or simply lay on a cookie sheet and broil a few minutes on high.
