These can easily turn into delicious waffles as well by adding an extra egg to the recipe and using a waffle iron.

Ingredients
- 1/2 Cup coconut flour
- 1/4 tsp baking soda
- 1/2 Cup coconut milk
- 4 Tbsp coconut oil melted
- 6 Medium eggs
- 2 Tbsp raw honey
- 1 tsp pure vanilla extract

- Mix ingredients together in a bowl, if you sift the coconut flour slowly in last, it seems to yield fluffier pancakes.
- If batter is too thick, add a little more coconut milk or water to thin. If too thin, add a little more coconut flour to thicken. Before adjusting though, let batter sit a few minutes as coconut flour thickens in time.
- Griddle or cook up in a pan in grass fed butter or coconut oil and enjoy. 1/8-1/4 cup of batter makes a nice size pancake.
