COCONUT FLOUR FLUFFY PANCAKES

Can you tell we LOVE our pancakes? There are just so many ways to make this comfort food and this recipe is up in our top favorites! Super healthy easy, yummy, filling, excellent source of fiber pancake recipe, courtesy of detox queen Rachel Feldman. Top with any yummy toppings you desire. These can easily turn into delicious waffles as well by adding an extra egg to the recipe and using a waffle iron.

Ingredients
  • 1/2 Cup coconut flour
  • 1/4 tsp baking soda
  • 1/2 Cup coconut milk
  • 4 Tbsp coconut oil melted
  • 6 Medium eggs
  • 2 Tbsp raw honey
  • 1 tsp pure vanilla extract
Prep Time 10 minutes
Cook Time 15 minutes

  • 1/2 Cup coconut flour
  • 1/4 tsp baking soda
  • 1/2 Cup coconut milk
  • 4 Tbsp coconut oil melted
  • 6 Medium eggs

Instructions
  1. Mix ingredients together in a bowl, if you sift the coconut flour slowly in last, it seems to yield fluffier pancakes.
  2. If batter is too thick, add a little more coconut milk or water to thin. If too thin, add a little more coconut flour to thicken. Before adjusting though, let batter sit a few minutes as coconut flour thickens in time.
  3. Griddle or cook up in a pan in grass fed butter or coconut oil and enjoy. 1/8-1/4 cup of batter makes a nice size pancake.
