Mix ingredients together in a bowl, if you sift the coconut flour slowly in last, it seems to yield fluffier pancakes.
If batter is too thick, add a little more coconut milk or water to thin. If too thin, add a little more coconut flour to thicken. Before adjusting though, let batter sit a few minutes as coconut flour thickens in time.
Griddle or cook up in a pan in grass fed butter or coconut oil and enjoy. 1/8-1/4 cup of batter makes a nice size pancake.
