CHOCOLATE AVOCADO PUDDING

While this might sound like a less-than-appetizing combination, you can take our word for it that it is absolutely delicious. Your family and guests will swoon over this rich and yummy dessert, that can double as a power snack. The avocado is undetectable but adds an amazing creaminess and is an easy way to sneak NUTRIENTS into DESSERT, that no one will be the wiser. *Note- serve these the day they are made to prevent oxidation of the avocados.

Pudding
  • 1 Can coconut milk or 1.5 cups of milk of choice
  • 1 Medium avocado ripe and pitted
  • 1/4 Cup cocoa powder or cacao powder
  • 2 Tbsp pure maple syrup add more if desired, but taste it first, 2 Tbsp go a long way!
  • 1 tsp pure vanilla extract
  • 1/4 tsp cinnamon
  • pinch salt
Topppings
  • 1 Tbsp slivered almonds
  • 1 Tbsp cacao nibs
  • 1 Tbsp shredded unsweetened coconut
  • 1/4 Cup mixed berries
Prep Time 10 minutes
Cook Time 15 minutes

Instructions
  1. In a food processor, combine milk, avocado, vanilla, cocoa, maple syrup and salt until creamy and smooth.
  2. Transfer to ramekins and chill in fridge 3+ hours.
  3. Add toppings just prior to serving and enjoy!
