This recipe is inspired from the 21 day sugar detox. Jicama has the taste and texture of a few kinds of produce all in one: part apple, part potato, even a little carrot-like, it can easily take on different flavors and here we have it as some vegan fries. Jicama is a high fiber root vegetable that aids in digestion and is high in calcium and vitamin C to boot!

- 1 jicama bulb
- 1 lime
- 1/2 tsp chili powder
- 1 tsp parsley chopped to garnish

Instructions
- Peel the jicama and slice into French fry size pieces, about ¼-1/2 inch thick.
- Place pieces in a bowl and squeeze the lime juice onto the jicama.
- Sprinkle with chili powder and chopped parsley. Enjoy immediately as jicama will become soggy.
