We LOVE the mighty chickpea around these parts. The chickpea has evolved beyond building an awesome hummus and now is found for a base for our cookie dough dip and a great snack here with these roasted chickpeas. Why are these little things so awesome? They are packed with fiber, protein, iron, help boost immunity and even promote better sleep. And they taste soooooo good!
Preheat oven to 450 degrees F. While oven preheats, rinse chickpeas well and drain in a colander, pat down with a paper towel (twice) and work to really remove all the moisture you can from the chickpeas while not mushing them up.
Bring chickpeas to a bowl and add all ingredients. Mix around to make sure they are evenly coated. Place in a jelly roll pan that is greased so they do not stick and roast in oven 30-40 minutes. Stir occasionally.
If they are not crunchy or roasted to your liking reduce heat to 250 degrees and roast a bit longer (5-10 minutes). To avoid scorching keep a close eye on the chickpeas during this point.
