Ingredients
- 2 Small cauliflower heads or 2 bags of florets
- 2 Tbsp coconut oil
- 1/2 Cup coconut flour
- 3 eggs
- 1/3 Cup bacon cooked and chopped
- 1/2 tsp garlic powder
- 1/2 tsp sea salt and pepper
- 1 Medium jalepeno finely chopped
- 1/2 Cup cheddar cheese grass fed, or goat cheese

Instructions
- Preheat the oven to 400º F.
- Use a food processor to rice the cauliflower, or finely chop into rice size pieces. Heat the oil in a large pan over medium heat.
- Sauté the cauliflower, jalapeño, bacon, garlic, salt, and pepper for about 7 minutes to get the cauliflower cooking. Remove from heat, and stir in the eggs, flour, cheese, and other add-ins.
- Scoop big spoonful's or use a 1/4 cup measuring cup to form biscuits on a baking sheet lined with parchment paper. Bake the biscuits at 400ºF for 35-40 minutes, or until they look browned. Let cool 3-5 minutes and enjoy! Can be stored in an airtight container in the fridge and reheated as needed.
