BUCKWHEAT GROAT OATMEAL

This is a nutrient packed breakfast powerhouse. Buckwheat groats are a gluten free seed and pack a wonderful punch of protein and fiber. Makes for a wonderful fall or winter breakfast. Get creative and dress it up with your favorite toppings like pumpkin seeds, nuts and raw honey.

  • 2 Cups buckwheat groats
  • 4 Cup water filtered
  • 2 Small apples
  • 1 tsp cinnamon
  • 1/4 tsp ginger
  • 1/2 tsp pure maple syrup
  • 1/4 tsp sea salt

Instructions
  1. Add buckwheat groats to water and let soak overnight (or at least 8 hours). Rinse and drain buckwheat and quickly pulse in food processor to make small pieces. Should have the consistency of cooked oatmeal at this point.
  2. Meanwhile on the stove, stew the chopped apples in a few tablespoons of water with the spices and sea salt until they are soft and start to break apart, about 10 minutes.
  3. Slowly stir in groats and syrup and/or a pinch of butter. You may thin it out by adding some almond milk, if desired. Transfer to a bowl and top with any other nutrient dense toppings and enjoy!
