- 2 Whole corn tortillas
- 1/2 Cup tomato chopped
- 1/4 Cup avocado chopped
- 4 Large eggs
- 1/2 Cup pinto beans or beans of choice
- 2 Tbsp cilantro chopped
- 1/2 Cup onion chopped
- 2 Tbsp sour cream optional

- Scramble eggs, and once they start to set, add onions, tomatoes, cilantro, and beans.
- Divide egg mixture and place onto warmed tortilla.
- Top with avocado, sour cream, and hot sauce.
