This stroganoff has a nice healthy spin! We have it creamy using sour cream and kefir, and instead of classic noodles, we have it with nutrient rich "noodles" - what more do we need to say? We use "zoodles" in this recipe, but feel free to use spaghetti squash or any noodles your prefer - or try using mashed cauli. If you end up with extra sauce, you can freeze or whip up more zoodles to soak the goodness up. London broil is a less expensive piece of meat which cooks up well when cooked in recipes like this. Feel free to use any steak cut you prefer.

- 4 Medium zucchini Prepare and cook into zoodles. See our recipe http://www.yourfitsquad.com/recipes/zoodles/
- 1 Pound london broil steak cut against the grain and sliced into 1-2 inch strips, top sirloin or any other cut of steak will also work
- 4 Tbsp butter
- 1.5 tsp sea salt divided
- 1/2 tsp ground pepper
- 1/2 Large yellow onion diced
- 1 Cup portobello mushroom or mushroom of choice, sliced into 1 inch slices
- 1/2 Cup dry white wine
- 1 Cup chicken broth
- 3/4 Cup sour cream or plain greek yogurt
- 1/4 Cup parsley finely chopped
- 1/4 Cup kefir plain

Instructions
- Prepare and cook zoodles or noodles of choice ahead of time and reheat while cooking this meal or cook while sauce is simmering.
- Melt half of butter in in a large pot over medium heat and brown the cut up steak with half of salt and pepper. Cook 6-9 minutes until cooked through. Remove the meat and set in a side bowl.
- Add remaining butter, onion and salt and sauté until the onions are translucent.
- Then add the mushrooms to the pot with the onions and cook another 3 minutes. Then pour the dry wine and stir. You can remove any brown bits with a slotted spoon. Simmer for an additional 5 more minutes.
- Next add the broth, and meat and cook on medium low. Slowly stir in the sour cream, kefir and parsley and simmer for 10 more minutes. Season with more salt and pepper, if needed.
- Plate the noodles and serve the sauce and meat over the noodles. Enjoy hot.
