BEACH COBB WITH HERB VINAIGRETTE

Spend all day at the beach, then come back home to this amazing salad! Well, even if you AREN'T hitting the beach, making this cobb will take you to a warm, sunny day! Nothing beats fresh, homemade dressing with clean ingredients. For the salad, there's major protein with the chicken and nuts, along with a nice mix of colors with the greens, grapes (purple or green) and avocado. And bacon, yum. Need we say more?!

Ingredients
HERB VINAIGRETTE
  • 2 Tbsp white wine vinegar
  • 1 Tbsp garlic minced
  • 4 Tbsp lemon juice fresh
  • 2 Tbsp lemon zest grated
  • 2 Tbsp assorted herbs (eg - parsley, basil, marjoram, thyme)
  • 1/4 tsp salt
  • 1 Cup olive oil extra virgin
  • 1 tsp dijon mustard
  • black pepper to taste
SALAD
  • 1 Head romaine lettuce roughly torn
  • 4 chicken breasts baked and sliced
  • 2 Pieces bacon fully cooked and crumbed
  • 1/2 Cup grapes cut in half
  • 1/4 Cup walnuts
  • 1/4 Cup celery chopped
  • 1/2 avocado sliced lengthwise

Instructions
  1. Assemble salad from ingredients and put in 4 bowls, or save leftovers.
  2. To make the dressing, combine all ingredients in a food processor until fully emulsified.
