- Combine eggs, banana, milk and cinnamon into a blender and pulse until well combined.
- Transfer mixture to a medium bowl (big enough to dip the bread into).
- Heat a well greased pan over medium heat on the stove.
- Dip one piece of bread in the egg mix and coat both sides evenly. Transfer to hot pan and cook 2-3 minutes per side.
- Serve just as is, or top with your favorite french toast toppings. the banana gives this dish the perfect hidden sweetness.
