BALSAMIC ROASTED BRUSSEL SPROUTS

We absolutely love brussel sprouts. And for those that don't already, this dish will make them Brussel Sprout Believers! This is a great way to enjoy them with a lot of added flavor and texture. Great as a side dish, or top with an over easy egg to make a meal.

Ingredients
  • 1 Pound brussel sprouts
  • 2 Pieces bacon nitrate free (optional ingredient)
  • 3 Tbsp balsamic vinegar
  • 2 Tbsp olive oil
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper

Instructions
  1. Preheat oven to 375 F. Slice brussel sprouts in half and discard stems. Chop bacon into small pieces.
  2. In a bowl combine oil, vinegar, salt and pepper. Then toss in brussel sprouts and evenly coat in liquid mixture. Finally, add in chopped bacon and mix together entire mixture.
  3. Transfer brussel sprout mixture to a lined or greased cookie sheet and spread out in a single layer. Bake 25-30 minutes until slightly crispy, turning the pan about half way through.
