- 2 Lbs london broil steak
- 1/4 Cup balsamic vinegar
- 2 Tbsp garlic crushed
- 1 Tbsp ground mustard
- 1 Tbsp lemon juice fresh
- 1/2 tsp salt sea
- 1/2 tsp black pepper

- 2 Cups broccoli florets
- 2 Cups cauliflower cut into florets
- 1 Cup carrot chopped
- 1 Tbsp lemon juice fresh
- 2 Tbsp olive oil

Instructions
- Combine all ingredients in for the meat marinade and whisk together. Pour over London broil and let marinade in refrigerator for 6-12 hours.
- Heat oven to broil and place meat on an oven rack. Bake on broil near top of oven for 5 to 7 minutes per side. Remove from oven and let rest for 10 minutes. Slice against the grain into small strips.
- Place all veggies on a baking sheet and drizzle with olive oil and lemon juice. Bake at 400 for 15-20 minutes, rotating veggies around every 5 minutes. Vegetables should be crispy and not mushy.
