Ingredients
Pancakes
- 1/3 Cup oat flour or spelt flour
- 2 Tbsp rolled oats not quick oats, must be rolled
- 1/2 Cup apples finely chopped
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 2/3 tsp baking powder
- 1/8 tsp sea salt
- 1 tsp pure vanilla extract
- 1 Tbsp pure maple syrup or coconut sugar
- 1/3 Cup almond milk or milk of choice
- 1 Tbsp coconut oil
Topping
- 1 Cup apples chopped
- 1 tsp pure maple syrup
- 1 Tbsp butter or ghee
- 1/2 tsp cinnamon
- 1 Tbsp walnuts chopped (optional)

PANCAKES
- Combine all dry ingredients in a bowl. In a separate bowl, combine wet ingredients. Slowly mix the wet ingredients into the dry, but don’t over mix. Pour 2 Tbsp of batter into a pan to form pancakes. Cook pancakes on an oiled/buttered pan, on low-medium, until bubbles form, flipping each pancake once.
TOPPING
- Heat a pan on medium with butter or ghee and let it melt, adding everything else but the walnuts. Once the apples become soft, add walnuts. Place topping over pancakes and enjoy.
