APPLE PIE PANCAKES

Need we say more than apple pie at breakfast! You must try these nutritious and delicious pancakes. Adapted from Chocolate Covered Katie.

Ingredients
Pancakes
  • 1/3 Cup oat flour or spelt flour
  • 2 Tbsp rolled oats not quick oats, must be rolled
  • 1/2 Cup apples finely chopped
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2/3 tsp baking powder
  • 1/8 tsp sea salt
  • 1 tsp pure vanilla extract
  • 1 Tbsp pure maple syrup or coconut sugar
  • 1/3 Cup almond milk or milk of choice
  • 1 Tbsp coconut oil
Topping
  • 1 Cup apples chopped
  • 1 tsp pure maple syrup
  • 1 Tbsp butter or ghee
  • 1/2 tsp cinnamon
  • 1 Tbsp walnuts chopped (optional)

Instructions
PANCAKES
  1. Combine all dry ingredients in a bowl. In a separate bowl, combine wet ingredients. Slowly mix the wet ingredients into the dry, but don’t over mix. Pour 2 Tbsp of batter into a pan to form pancakes. Cook pancakes on an oiled/buttered pan, on low-medium, until bubbles form, flipping each pancake once.
TOPPING
  1. Heat a pan on medium with butter or ghee and let it melt, adding everything else but the walnuts. Once the apples become soft, add walnuts. Place topping over pancakes and enjoy.
