Chocolate, almonds, and coconut. Need we say more? Take yourself back to the sweetness of a candy bar, but with a clean ingredient list with this Almond Joy Bark. No high fructose corn syrup or fillers here, just three simple ingredients! For chips, we really love using the Enjoy Life brand for their simple ingredients and high quality.

  • 12 Ounces shredded unsweetened coconut
  • 1 1/2 Cup almonds or pistachios

Instructions
  1. Preheat oven to 350°F.
  2. Line a baking tray with foil. Spread the almonds on the baking tray and bake for about 10 minutes until roasted.
  3. Remove to cool. Pulse in food processor if you choose.
  4. Line a baking tray with parchment paper.
  5. Put chips in a microwave safe bowl and heat at 50% power for 30 second increments, stirring between each heating - about 2 minutes total.
  6. Pour melted chocolate onto parchment paper and cover with coconut and almonds.
  7. Let harden in the fridge for about an hour; remove and break into pieces with your hands.
