This recipe was put together in Rachele's kitchen based off of a craving she was having for a creamy tomato dish. Feel free to get creative with this one, add in other fresh herbs or any protein of your choice. A great way to use some fresh tomatoes in the late summer.
Summer may mean more crisp salads and salsa-y fish tacos, but that doesn’t mean we don’t want something extra indulgent tasting in between acai bowls and plates of garden fresh Caprese. What to do when that moment strikes? Ladies and gentlemen, may we introduce VFit Squad Chili Fries. And although they sure don’t taste the part, these are So. Nutrient. Dense. Like, you can’t tell your sig other or children, because they’ll think you’re lying.
This stroganoff has a nice healthy spin! We have it creamy using sour cream and kefir, and instead of classic noodles, we have it with nutrient rich "noodles" - what more do we need to say? We use "zoodles" in this recipe, but feel free to use spaghetti squash or any noodles your prefer - or try using mashed cauli. If you end up with extra sauce, you can freeze or whip up more zoodles to soak the goodness up. London broil is a less expensive piece of meat which cooks up well when cooked in recipes like this. Feel free to use any steak cut you prefer.
This is great as a main dish, or as an appetizer to share. Your guests will think you spent hours in the kitchen with all the complex flavors. And there are veggies added in, which make this a superstar dish in our minds. If serving as a main dish, this pairs great over zoodles, quinoa, cauli rice or brown rice. These baked eggs cups are perfect to bake in advance and freeze for a quick snack or breakfast on the go! Adding in extra veggies helps boost the nutrition and get more veggies in to start your day.
Who doesn't love the color green in their food? This bowl is PACKED with nutrients and will keep you energized to tackle your busiest days. Feel free to get creative with this meal and add any source of protein you have on hand.
You may see the title of this and think to yourself, "wow, these guys love their zoodles" -- and you're definitely on to us! But let's be honest...zoodles are amazing. They're nutritious (they are, after all, a veggie), they're easy, there's no boiling required, they have an awesome texture, and they're the perfect little vehicle for anything you'd ordinarily slap on some pasta...and then some. This is the recipe for the gal (or guy!) on the go - 20 minutes max start to finish, can be pre-made and these are equally delish eaten cold. Don't feel like cooking up meat? Rinse some white beans and throw them in the mix instead. In any case - this is a winner.
A great dish to make in advance and enjoy throughout a busy week. You can add any extra veggie you have on hand and need to use up. Great topped with fresh avocado and salsa.
A fan favorite!!! You don't want to miss out on this hearty and nutrient packed meal. Another great one for anyone going meatless. We have yet to find someone who wasn't impressed and filled up from this simple, yet delightful recipe.
If you ever wondering how it would taste to eat zucchini bread, carrot cake, and oatmeal in one sitting, you now officially have your answer. It's this slow cooker oatmeal and it's out of this world. Oatmeal can get really boring, but by sneaking (errr...we mean adding) the carrots, zucchini, and spices, this makes a very memorable breakfast to share. Please see note, you can make this on the stovetop as well!
