CREAMED SPINACH
Creamed spinach is one of those ultimate comfort foods. Perfect for a cool evening, or if you are in need of some warm, nourishing veggies. We've created a tasty spin on this comfort food classic that forgoes the actual heavy cream and tons of cheese, for sour cream instead. The end result is a nutrient dense power house side dish that will make you feel comforted AND satisfied by meal's end.
DARK CHOCOLATE CHIA SEED PUMPKIN PROTEIN MUFFINS
How's that for a mouthful?! Don't worry - these delicious muffins are easier to whip up than the name implies. Added bonus: they're grain free, high in protein, and packed full of antioxidants thanks to chia seeds, pumpkin and nut butter! We dare you to eat just one! This recipe calls for 12 muffins, or would make great mini muffins if you have that kind of tin, just shorten the cooking time appropriately so they do not over bake. Also, if you don't have a food processor you can also mix these by hand with chocolate chips before putting into muffin tray.
GINGERED GREEN BEANS
These aren't your mommas green beans! We've added digestive aid ginger to the mix, along with an unexpected spicy kick from crushed red pepper flakes. Fun fact about crushed red pepper, did you know that it has anti-inflammatory properties? If you're experiencing any pain or inflammation in your body, if you boost your intake of crushed red pepper it may help as the compound capsaicin which gives them their hot and spicy flavor helps reduce pain.
KALE AND SAUSAGE STUFFED CHICKEN
Something about stuffed chicken really dresses up a plain ol' breast. There's nothing plain about this recipe though! We take crumbed tasty sausage mixed with kale and stuff it into a chicken. After a quick pan fry, it's put into the oven and out comes yummy chicken with a boost of nutrition from the kale to boot! Adding in that sausage will help make this a crowdpleaser for the whole family.
SPINACH POMEGRANATE SALAD WITH PEARS AND HAZLENUTS
There are just about a million ways you can make a salad, and at VFit Squad, we love giving you some of our favorite ways to prepare a salad. The key to enjoying food, is to never get bored and to keep fresh/seasonal produce part of your rotation. This is a fabulous fall salad sure to fuel your palate and belly. To make this a full meal, add any protein source of your choice on top.
SWEET POTATO NOODLES WITH TURKEY
We are here to show you that you can make "noodles" out of so many healthy veggies! This is a fantastic and heart warming dish that is great in the fall and winter. Attn: Veggies! Meat is optional. You can always sub out zoodles or any other noodle of your choice. We recommend doubling the recipe as this will make for fantastic leftovers during the rest of your busy week.
Chickpeas Please
We LOVE the mighty chickpea around these parts. The chickpea has evolved beyond building an awesome hummus and now is found for a base for our cookie dough dip and a great snack here with these roasted chickpeas. Why are these little things so awesome? They are packed with fiber, protein, iron, help boost immunity and even promote better sleep. And they taste soooooo good!
