CHILI ROASTED SALMON WITH CILANTRO CREAM

This is one of those dishes that tastes like it took hours to prepare, but was easily made in 30 minutes. We are sure once you try this dish, you will be making it all the time. Feel free to add any extra veggies on hand. Pairs well with cauli mash or over steamed greens.

CROCKPOT ROPA VIEJA

This is one of Rachele's FAVORITE crockpot dishes. It is so full of flavor and simple to make. This ropa vieja pairs wonderful with some spicy slaw or cilantro lime cauli rice. This shredded meat is easy to make, yet tastes gourmet AND its rich in flavor, all while staying packed full of fresh veggies and spices.

BLACK BEAN STUFFED PEPPERS

CROCK POT CARNITAS

This is a flavorful and easy to make dish great for a busy day if you plan ahead. Simply do the first step in the morning, then just before dinner you finish it off and have delicious carnitas meat to enjoy. We LOVE this as tacos, with cauli rice or over some spicy slaw.

GRILLED SALMON WITH AVOCADO SALSA

We love the unexpected topper of this salmon dish with our homemade avocado salsa! Salmon is already full of protein and heart healthy fats. The avocado adds in even more heart healthy fat, nearly the alphabet's worth of vitamins (A, B, C, E, and K), folate, protein, and a boost of fiber. We love the contrast of creamy avocado, the crunch of the red onions, and the tender salmon underneath.

GRILLED SALMON KEBABS

These skewers are real beauties on the grill! Vibrant colors of orange, yellow and green. The gently folded lemon makes this look almost too good to eat. But TRUST us, you, and everyone you know, will want to get their hands on these skewers. They are sooooo good. The added citrus and our spice blend make this a very memorable dish to grill up. This would go great with our Garlic Roasted Broccoli and a side of cauli rice.
