COCONUT SHRIMP AND THAI GREEN SAUCE

This recipe will take you to the Carribbean. Turn up some calypso or reggae and enjoy making these yummy coconut shrimp! The outer coconut crispy coating is a total treat and then we've put together a nutrient packed Thai inspired sauce to use as a dip or a sauce. It's a match made in food (or belly) heaven! Work to chop and prep all your ingredients for sauce before starting it to starting it up. We call for a blender or using your immersion blender for it. If you want your sauce thinner, you can always add in a little water to water it out or enjoy it thick as a dip like our photo.

COCONUT MILK POPSICLES

Making your own popsicles from home is easier than you think! Once you pick up those popsicle molds, it's as simple as mixing together these simple ingredients, pouring, then freezing in the fridge. So many traditional popsicles have a LONG list of ingredients to preserve them for freshness and lengthen their shelf life. Keep it clean and make these for that next warm spell or whenever you want to feel like you are off on some tropical vacation. Try adding fresh herbs such as rosemary for a gourmet and delicious twist! These have been inspired from Rawsome Vegan Life.

APPLE BERRY CRUMBLE

Adapted fro a recipe of Miriam Pascal's over at Overtime Cook, we can't get enough of this apple berry crumble. Combining the tartness of blueberries, sweetness of strawberries, and crisp apples gives this crumble a filling you'll soon NOT forget. Using coconut or date sugar in the crumble adds a wonderful caramel hint!

EASY BAKE RIBS

These ribs are simple to make and free of added salts and preservatives. You can bake these ahead of time to store for a busy night. Simply pull them out and broil them up or heat up on the grill. Try topping with our Finger Licking Good BBQ Sauce, located under sauces and dressing. You can get creative with your favorite spice blends, but we found the mix below to be a good mix.

DARK CHOCOLATE RASPBERRY MOLTEN LAVA CAKE

Yes ... you read that correctly! Life is short, sometimes, you do NEED dessert. A little sugar here and there is not going to kill you, it’s just not, but we always recommend eating dessert made from the highest quality ingredients, so that you’re completely satisfied and not putting chemical junk into your body. This lava cake recipe is adapted slightly from TexanErin. That said, these aren’t actually that high in sugar - just 1/4 a cup - and we use coconut sugar. Coconut sugar is quite low on the glycemic index and it contains inulin. Inulin has properties similar to probiotics, and helps with gut health which can boost to the immune system. These are also grain free for you grain- free eaters. And, believe it or not, they are a lot easier to make than you would think. Just be very careful not to over bake.

GINGER MOLASSES COOKIES w/ DARK CHOCOLATE

These molasses cookies were inspired by a vegan blog that many of our members rave about, Oh She Glows – but taken to the next level. Blackstrap Molasses is the highest quality and most nutritious kind of molasses- it has a high iron content, and is high in copper, calcium, and magnesium. Spelt flour is used in place of white flour – spelt is an ancient grain higher in protein and fiber than its counterparts, and is also richer in vitamins and minerals, and is typically easily digestible. Flax, cinnamon, and ginger add extra nutrients to these otherwise naughty tasting cookies.
