A simple, nutritious and delicious girl on the go style meal. This salad takes all of our favorite bits of Mediterranean cooking and pulls them together in a very satisfying salad.
This may seem like a far stretch, but we really love this unique spin on a Mexican favorite. Collard greens make excellent "tortillas" and allow you to make a nutrient dense version of your favorite enchiladas. This recipe pairs great with cauli rice or spicy slaw and some whole beans.
You have to try this salad to believe how great it is! If you love Asian chicken salads, you will love this fresh creation. Free of processed sugar and less than desirable oils, you will feel full of energy after this power burst of flavor and nutrients. You can always omit the chicken or add any other protein in its place. The recipe was adapted and modified slightly from the Against All Grain Blog. This salad tastes best if you let it sit for at least an hour prior to serving, make sure you allot for that time when putting this together. This also makes a HUGE salad, so even though there's a lot of slicing and shredding, know you'll have plenty of this salad to eat and enjoy!
Ditch your store bought barbecue sauce usually full of sugar and hight fructose corn syrup and try this amazing and simple crock-pot chicken. It may seem like a lot of ingredients, but once you have your pantry stocked, they will last a long time. Full of sweet, smokey and tangy flavor, this is a great combo. If you prefer to use our Fingerlicking Good BBQ Sauce, you can sub that in as well. Try pairing this with some grain free flat bread, cabbage and kefir ranch for one hit BBQ meal. This recipe was modified from Against All Grain.
Spend all day at the beach, then come back home to this amazing salad! Well, even if you AREN'T hitting the beach, making this cobb will take you to a warm, sunny day! Nothing beats fresh, homemade dressing with clean ingredients. For the salad, there's major protein with the chicken and nuts, along with a nice mix of colors with the greens, grapes (purple or green) and avocado. And bacon, yum. Need we say more?!
We love pizza and know that you all do as well. We are always trying new recipes out to try and find a great grain free pizza, and this is one that got the VFit Squad nod of approval. We've adapted this recipe from freecoconutrecipes.com, with some twists and tweaks . You can get creative with your own toppings and sauce. We highly recommend you make the BBQ sauce from our Rolodex if you can, since more store bought sauces are full of additives that we prefer to steer clear of. You can bottle and save any extra sauce in a jar and keep in the fridge. You can also always cook two crusts and freeze one for later use, trust us, you'll wish you had after you have your first bite!
Step up your grill game beyond burgers and wow the crowd with this tasty Grilled Chicken Bruschetta! Trust us, you won't even miss the bread, we promise. Flavors literally BURST at the seam here, and with breasts being marinated, this recipe yields delicious and moist breast meat. We love keeping this simple and rounding out the meal with some quickly wilted fresh spinach and cauli rice.
Something about stuffed chicken really dresses up a plain ol' breast. There's nothing plain about this recipe though! We take crumbed tasty sausage mixed with kale and stuff it into a chicken. After a quick pan fry, it's put into the oven and out comes yummy chicken with a boost of nutrition from the kale to boot! Adding in that sausage will help make this a crowdpleaser for the whole family.
There's so much nutrition in this fresh take on chicken salad. We have protein packed chicken, then even more protein with the Greek yogurt (and a probiotic boost to boot! You don't get that from classic mayo!). We've also added in a wonderful and easy spice mix for that yogurt dressing and added a bit of sweetness from some halved grapes. We suggest topping this over some sprouted bed and adding in calcium rich, cancer fighting, mood and immune boosting watercress on top. Food is indeed medicine with this recipe.
You may see the title of this and think to yourself, "wow, these guys love their zoodles" -- and you're definitely on to us! But let's be honest...zoodles are amazing. They're nutritious (they are, after all, a veggie), they're easy, there's no boiling required, they have an awesome texture, and they're the perfect little vehicle for anything you'd ordinarily slap on some pasta...and then some. This is the recipe for the gal (or guy!) on the go - 20 minutes max start to finish, can be pre-made and these are equally delish eaten cold. Don't feel like cooking up meat? Rinse some white beans and throw them in the mix instead. In any case - this is a winner.
