KID APPROVED KEFIR MAC N CHEESE

This is a great twist on mac n cheese filled with flavor, nutrients and probiotics. Never serve the boxed kind again and feel good knowing exactly what's in your mac n cheese. Adults love this as well. Feel free to add fresh veggies or meat of choice to dress this recipe up.

LOADED SWEET POTATO NACHOS

Transform your favorite snack/appetizer from nutritionally void, to a nutrient powerhouse of a meal by swapping out tortilla chips with thinly sliced sweet potato circles, and loading 'em up thick with veggies, avocado, and beans. Adapted from Two Peas and Their Pod. Add some fresh chicken, beans or ground meat of choice to up the protein on this fabulous dish. You can also skip making chips from the sweet potatoes and instead bake them, adding all toppings after to make a "loaded" sweet potato.

ZUCCHINI SOFT TACO SHELLS

There isn't much you can't make with Zucchini, and this recipe is proof of that! These soft shells make the perfect and simple grain free wrap to put together. The key is in squeezing as much water out of the zucchini as you can, so that they hold well.  Full of healthy ingredients, simple to make and sure to hold up to your favorite taco fillings. Enjoy these shells as a snack or a wrap, think far beyond just a taco shell.
