This is a great option for Meatless Monday (or Taco Tuesday) or any day really! We love the rich and creamy taste of butternut squash. Packed full of nutrients, this meal is a very quick and healthy spin on Mexican food.

We love this meal because it is easy to prepare, presents well and tastes delicious. It is easy to prep ahead of time and bake after a busy day of work. It's also packed with nutrients and a perfect way to use up some bell peppers!

This is the perfect #MEATLESSMONDAY chili to whip up. Full of flavor, protein and fiber, this chili is simple to make, will fuel you well and makes for excellent leftovers in that busy week. This dish freezes well if you do make a double batch.
LOADED SWEET POTATO NACHOS
Transform your favorite snack/appetizer from nutritionally void, to a nutrient powerhouse of a meal by swapping out tortilla chips with thinly sliced sweet potato circles, and loading 'em up thick with veggies, avocado, and beans. Adapted from Two Peas and Their Pod. Add some fresh chicken, beans or ground meat of choice to up the protein on this fabulous dish. You can also skip making chips from the sweet potatoes and instead bake them, adding all toppings after to make a "loaded" sweet potato.
Fresh Adobo Veggie Tacos
When the corn and zucchini are coming fresh from the farm stands, THIS right here is the recipe to be making. Inspired by a craft taco joint in Ohio, this is an inventive take on a veggie filled taco with a quick and easy cilantro drizzle to go over the top. You can use corn tortillas, do up a batch of our grain free flatbread and use those, or use this topping to go atop some sweet potato nachos!
